1 med head of cauliflower, cut into 3/4" pieces
1 large red pepper (2 is even better) cut into 1" pieces
1 garlic clove, finely chopped (or pressed)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
Preheat oven to 450 degrees. In a large bowl, toss all ingredients until evenly coated. Arrange vegetables in a single layer in a jelly-roll pan (or two if needed). Roast 20 minutes (or 17 if pieces are smaller).
Yum yum yum, eat it while it's hot!
Sounds like a good winter-y recipe. I'll definitely make & eat this...we'll see about Matt--he's not so much sold on the cauliflower part :)
