Lemon and Tarragon Baked Chicken

You get this one because it's what I am making for dinner tonight. It is a bridal shower recipe from Tanya Loucks. We like it because it's got a little zing but still delicious, easy baked chicken. You'll probably have to go buy Tarrgon, though, because it's not a normal spice. Sorry.

1/4 cup butter
1 garlic clove, minced
1 Tbsp. Dijon mustard
1/2 cup dry bread crumbs
1 1/2 tsp grated lemon peel
1/2 tsp dried tarragon
3 lg. chicken breast halves

Preheat oven to 375F. Line a baking pan with foil. Melt butter in a skillet over low heat. Add garlic and saute for one minute. Remove skillet from heat and stir in mustard.

Mix together bread crumbs, lemon peel, and tarragon on a deep plate.

Turn the chicken in butter mixture to coat, then turn in crumb mixture. Arrange in pan. Sprinkle with salt and pepper. Bake until chicken is cooked through, basting occasionally. Cook one hour if bone-in breast; 1/2 hour if boneless.

Serve with your favorite carb--I prefer sour cream mashed potatoes :)

  1. Mmm...this sounds great and easy and, like you said, the only ingredient I'd have to get is Tarragon. Thanks for a new idea!

  2. So this is my follow up post to announce that this recipe is, indeed, delicious and easy! We really loved eating it and the recipe is in the "to make again" binder.
