Hootenany Chicken

This is a recipe that my Gram Millie made frequently for our Wednesday night dinners (upon request...she knew that I loved it!). It's very simple and very much a comfort food. You can serve it with rice or just eat it by itself as a casserole. Plus, it has a funny name :)

1 chicken (approx. 4 breast halves)
1-3 carrots, thinly sliced
2-10oz pkgs. broccoli, or fresh broccoli
1 onion, chopped
1 can cream of celery soup
2/3 c. mayonnaise or miracle whip
1/2 c. evaporated milk or milk
1/2 c. grated sharp cheddar cheese
1/2 tsp. curry powder
1 tsp. lemon juice

1. Cook chicken and slice it or cut it into 3/4" cubes. (You could use a rotisserie chicken)
2. Cook vegetables until tender
3. Mix together all other ingredients
4. Layer in a casserole dish: vegetables on bottom, chicken in the middle, liquid mixture on top
5. Bake at 350degF for 30 minutes, uncovered.

Voila!

As far as the onions are concerned, be careful! Using an entire onion makes it quite onion-y (according to Matt). I prefer to chop it in very small pieces so that you don't eat onion chunks, but you'll have to decide for yourself!
