12oz uncooked GROUND TURKEY or ground beef
3/4 cup chopped onion (1 large)
3/4 cup chopped green bell pepper (1 medium)
1/2 of a 3.5oz package sliced pepperoni
1 14 to 15.5 oz jar or can of pizza sauce
1 4oz can mushroom stems and pieces, drained
1 tsp dried Italian seasoning, crushed
1/2 tsp fennel seeds, crushed
2 eggs
1 cup milk
1 tbsp cooking oil
1 cup flour
1.5 cups broccoli florets
1 cup shredded mozzarella cheese
2 tbsp grated parmesan cheese
1. In a large OVENPROOF skillet, cook turkey, onion, and pepper over medium heat until meat is brown and vegetables are tender. Drain off fat.
2. Cut pepperoni slices in half, and stir pepperoni, pizza sauce, mushrooms, and spices into the meat mixture. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes, stirring occasionally.
3. For popover topping, combine eggs, ,milk, and oil in a small bowl. Whisk for a good minute. Add flour; beat for one minute more or until smooth.
4. Top meat mixture in skillet with broccoli; sprinkle with mozzarella.
5. Pour popover topping over mixture in skillet, covering completely. Sprinkle with Parmesan cheese.
6. Bake for 25-30 minutes at 400degF or until topping is puffed and golden brown. Makes six servings.
