This makes a lot of casserole, so you can either cut down the recipe or make the whole thing and freeze leftovers (it freezes well!). The recipe is meant for four people, but those are four very hungry people who aren't eating anything else with their meal, I think!
2 tbsp vegetable oil
1/2 lb boneless, skinless chicken breasts, diced in 1/2 inch pieces
1.5 cups heavy cream
2 cups shredded monterrey or pepper jack cheese
1.5 cups canned corn, drained
2/3 cup chopped green onions
1 cup thick and chunky salsa
1 bunch cilantro, chopped fine (I use dried)
1 4oz can mild green chilies
salt and pepper to taste
8 oz bag medium egg noodles, cooked and drained
1. Preheat oven to 350degF
2. Heat oil in medium skillet, add chicken and saute 3 minutes
3. Add cream, cheese, corn, green onions, salsa, and blend well
4. Add cilantro, chilies, salt, and pepper
5. When mixture is hot and beginning to thicken, fold in hot cooked noodles
6. Pour noodles into a casserole dish and bake 15 minutes
7. Remove from oven and serve immediately
