Best Strawberry Bread

This comes from a book I have called The Reluctant Entertainer by Sandy Coughlin and it might be my very favorite fruit bread ever. And bonus - it's a one bowl recipe (except for beating eggs in a small bowl).

So easy. So good. Every single time.

Not the most glamorous picture, but I'm telling you - it's good.
Best Strawberry Bread

Makes 6 small loaves or 2 large loaves (I've only ever tried the 2 large loaves)

3 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 tsp. vanilla
2 cups sugar
4 eggs, beaten
1 cup cooking oil
2 1/2 cups sliced strawberries (or any fresh berry)

Preheat oven to 350. Spray loaf pans lightly with nonstick cooking spray. Combine all ingredients except the berries in a bowl and mix together with a wooden spoon. Stir in the berries last.

Place batter in loaf pans. Bake 35 - 40 minutes for small loaf pans, or about 60 minutes for large loaf pans.

Gift idea from the book:
This bread can also be baked in a canning jar and given as a gift - right in the jar! Use wide-mouth pint-sized jars, and wipe the inside of the jars with vegetable shortening (nonstick spray will not work). Fill jars two-thirds full and bake at 350 for 45 - 50 minutes. Makes 5 jar loaves.

  1. I love strawberry bread! Can't wait to try out this recipe and see how it compares to my old one!! Off to buy strawberries (can't grow 'em here, unfortunately...at least not ones big enough to bake with)...
