This was a recipe gifted to me by Ben at one of my bridal showers. He wrote it on the back of a label from a sheet set (see photo below). I love that guy.
1 box jumbo shells (16oz) (cooked)
16oz ricotta cheese
16oz shredded mozzerella
1/2 c. parmesan cheese
16oz spinach, rinsed and diced
1 lb beef or italian sausage or mix of the two (cooked & drained)
1 jar spaghetti/tomato sauce
black pepper
1 tsp sweet basil
1 tbsp olive oil
1 egg, beaten
1/2 c. parsely
1 tsp. garlic powder
- Preheat the oven to 375degF
- Mix half of the mozzerella with the all cheeses, spices, oil, and egg.
- Fold in the spinach and the meat.
- Use a tablespoon to fill cooked shells with the mixture.
- Sprinkle with remaining cheese and top with sauce.
- Bake covered for 15-20 minutes.
- Uncover and bake for 5 more minutes.
