It's sounds a little odd but it's pretty easy and tasty. You only have to chop onions and garlic and the rest is measuring.
Pasta, Lentils & Artichoke Hearts
1/2 cup red lentils
1 1/2 cups water
1 bay leaf
1/2 tsp olive oil
1 cup diced onion
1-2 garlic cloves, pressed
1 tsp cumin
1/2 tsp ground coriander
1 tbsp lemon juice
14.5 oz can diced tomatoes
1 cup quartered artichoke hearts (frozen or canned)
1/8 tsp crushed red pepper
1/2 lb colored spiral pasta
salt and pepper
1. Cook lentils in water with bay leaf. Bring to a boil then lower heat, cover and simmer about 15 minutes.
2. Heat olive oil and saute onions on medium for 5 minutes.
3. Add garlic, cumin and coriander and cook for 2 more minutes.
4. Add lemon juice, tomatoes, artichoke hearts and crushed red pepper (gives a very very mild spicyness) and simmer on low heat for 10 minutes.
5. Cook the pasta in your spare time.
6. Drain lentils and discard bayleaf. Add lentils to simmering mix. Simmer for another 10 minutes.
7. Combine pasta and lentil sauce. Enjoy!
